Orange Cardamom Chocolate Mousse
Ingredients
- 1-3 ounce high quality dark chocolate bar, broken into pieces
- 1-12.3 oz package shelf-stable firm silken tofu (like Mori-Nu), cut into large chunks
- 1/4 cup orange juice
- 1 tbsp. unsweetened cocoa powder
- 1 tbsp. agave nectar, maple syrup, or honey (if you’re not vegan)
- 1 tsp. ground cardamom
- zest from 1 whole orange
Instructions
- Place chocolate bar pieces in a microwave-safe bowl and microwave at 20 second intervals until melted (stirring after each interval). You can use a double-boiler instead if you prefer.
- Combine tofu and orange juice in a blender or food processor; process until smooth. Add remaining ingredients and process until well-combined. Chill in refrigerator for 1 hour before serving.
Notes
Cook time is the hour needed to chill the mousse before serving. There’s no actual cooking involved.
Vegetables before their roasting.
Bell pepper, baby carrots, mushrooms, zucchini, baby tomatoes and one onion tossed with an 18 yr old balsamic that I bought last week from the farmers market. Salt and pepper and a canola oil spray also included. This is my favorite part about the end of my vegetable supply, making a “roast” or a stir fry out of them all!

Last night at work a coworker, John, made a bet with me that his product would sell more then mine, we made the bet at around 5pm and when we checked on it at 9pm neither sold more then the other! I chose a watermelon as my prize =P

So lets talk bread…
I just bought some awesome Tuscan Pane bread from Trader Joe’s, I am so excited to try out new combinations of little toast snacks! I don’t usually eat bread so this is a new thing for me to just buy a loaf of bread, but i tried some at wokr and was so impressed by the fact that its Vegan and only has 3 ingredients! Whole wheat, water and salt! Wow.
I think I’m gonna use a cookie cutter to make little star shaped toasts, then roast them for a few minutes.
I was in the middle of making some lemon curd (link below) for some balsamic and strawberry muffins, when I decided to try some combinations with this new bread I got. The bread plus the lemon curd is AWESOME, it tastes like a donut!

Lemon curd and coconut whipped cream
Baba Ganoush with balsamic vinegar
Peanut butter and mashed banana with sesame seeds
